Pumpkin Stew

Ingredients:
Diced pork pieces with a bit of fat on, as much as needed for your family size
3 medium onions, peeled and finely chopped
3-5 whole chillies (depends on how much heat you can take
3 all spice (pimento)
1 cinnamon stick
Salt to taste
3 peeled and cubed potatoes
2-3 tablespoons of sugar
1kg peeled and cubed pumpkin

In a large pot, heat oil and add all the spices & chillies to season the oil. Fry 2 minutes. Add the onions and fry till golden brown.
Remove the onions and spice, add the meat, browning on all sides.
Return the onions and spice to the pot with the cinnamon stick.
All salt and braise for 5 minutes.
Add the cubed potatoes.
Add 1 cup of hot water, simmer on medium heat until water has dissolved. Repeat this process until the meat in tender and the potatoes is soft.
Add cubed pumpkin and sugar and braise till pumpkin is soft, stirring occasionally.
By now the potatoes are mashy and have thickened the sauce. Serve with chopped chillies or chopped parsley. Enjoy.
