Slow Cooked Spiced Pork Ragu


Pork Fillet – About 500g
1 onion
2 tablespoons tomato paste
3 garlic cloves, minced
1 cup red wine
2 tablespoons thyme
1 can crushed tomatoes
Water as required
Teaspoon brown sugar
1 tablespoon soy sauce
1 tablespoon mixed dried herbs
Pinch garlic and onion powder
Half cup dried apricots


Slice fillet in cubes and brown. Remove and in the same pot, add onion and garlic. Add paste and fry for a few minutes. Add tomatoes, herbs and wine. Cook for a few minutes then add the pork and remaining ingredients. Reduce the heat and simmer for an hour and half. After the cooking time has lapsed, remove from the heat, add more water if needed and stir. Serve with a creamy potato mash and enjoy…
